In Valencia the number you see is rarely the number you pay — not because anything is hidden, but because what the rate covers keeps changing. A life jacket and insurance are always in; a transfer never is; a €300 deposit only shows up at the berth. Before comparing two outings it is worth reading five lines, in this order:

What is included in almost everything
Insurance appears in the included list of almost every Valencia outing, and life jackets in most of them — every jet ski and every catamaran names one. Fuel is in wherever there is an engine to feed: the jet ski rentals, the Wavepol trips, the Arrecife rental, the wake session, the VelaMagna yacht and the fishing charter, and in Arrecife's licence-free rental it is included "per tariff" — that is, per the hours you book. Lessons add the full kit: board and wetsuit for wake, and kite, bar, harness and a helmet with radio on the kitesurf course.
What no outing includes: the transfer
Not one Valencia operator includes the ride to the marina, from a hotel or from the airport. It is the one line that repeats on every Valencia outing. For distance, the jet ski operator counts about 15 minutes by car from the city centre to Marina Real Juan Carlos I, 17 from Malvarrosa, 19 from El Saler and 21 from the airport. Gratuities are also listed separately by almost every operator.
The €300 deposit that is not in the rate
It only appears when you hold the wheel yourself. On Arrecife's licence-free rental the rate is €110 per boat an hour and covers fuel, life jackets, the briefing and insurance; the €300 deposit is refundable and sits outside the price. No skipper is needed — the operator marks it "not needed" — and rates run by 1, 2 and 4 hours or a full day.
Photos, video and drone
This is the biggest difference between two outings from the same operator. The "Valencia Norte" tour at €175 per person includes action-cam filming of the whole route, sent within 3 to 5 days; the drone is extra, €100 per jet ski or €300 for all four. On every other outing — jet ski rental, wake, kite and windsurf lessons, diving — photos and video are listed as an add-on.
The skipper: inside one yacht's price, outside the other's
The two sailing days cost almost the same and are not comparable as they stand. VelaMagna asks €490 per boat for six hours with a professional skipper included. Illuka Sailing asks €400 per boat for the same six hours on a Bavaria 46, but the skipper is listed as an optional add-on. Add one, and the cheaper headline stops being the cheaper day.
Food and drink
The general rule is that they are extra, with two clear exceptions. The sunset catamaran includes a glass of cava in its €14 per person, and the Fiestas Barco charters include the welcome board and the first drink; paella and further drinks are paid for. On the Mundo Marino swim cruise and the Wavepol outings, food is an optional package.
Wetsuits, certification and other seasonal lines
On jet skis the wetsuit is listed as a seasonal extra: in summer you do not need one, and out of season you ask when booking. In wake, kite and windsurf lessons, by contrast, the wetsuit is included. In diving, the first dive comes with a PADI instructor, all the equipment and insurance, but certification is a separate course: both centres run them from Open Water upward.
When each part is paid
Important
on the northern tour the payment is split. It is a €35 deposit per person online to hold the spot and €140 to the operator on the day, by card or in cash. If the operator cancels for weather the deposit is refunded; if the date moves, it moves with it. On the other outings booking goes straight to the operator at the operator's own rate, and the exact berth follows afterwards.
